Lucky Star Tuna NiçOise

Ingredients
200g fine beans 4 eggs
100g cherry tomatoes, halved
400g mixed lettuce leaves
2 tins Lucky Star tuna Salt and pepper

For the dressing:
2 Tbs red wine vinegar
2tsp Dijon mustard
100ml olive oil

Method:
Blanch the beans in boiling salted water for about one minute.
Remove from the boiling water and plunge into ice cold water to stop the cooking process.
Boil the eggs for 7 minutes. Then peel and quarter.
Place the tomatoes, lettuce, tuna and cooled, drained beans into a bowl
In a separate bowl, whisk together the dressing ingredients and season with salt and pepper.
Pour the dressing over the ingredients and toss the salad to coat all of the ingredients.
Place salad onto serving platter then top with the quartered eggs.
Serve immediately.
