Lucky Star Pilchard And Cannellini Bean Crostini

Ingredients
1 loaf ciabatta bread
Olive oil
1 tin Lucky Star Pilchards in tomato sauce
1 tin cannellini beans
1 cup cherry tomatoes, quartered
Salt and pepper
1 packet Rocket Parmesan to garnish

Method:

Slice the ciabatta into thick slices.

Drizzle with olive oil.

Toast the bread in a hot griddle pan until coloured on both sides.

In a bowl, break up the pilchards

Add the beans and tomatoes.

Season with salt and pepper.

Lay some rocket on the toasted bread.

Top with the pilchard mixture

Using a peeler, shave some parmesan onto the top.

Place onto a plate and drizzle with olive oil before serving.

Best enjoyed with: Wine
