Lucky Star Mackerel Fishcakes

Ingredients
1 tin of Lucky Star Mackerel
2 cups mashed potatoes, cooled
2 Tbs ground coriander
2 Tbs ground cumin
Olive oil
For the coriander mayo:
1 cup mayonnaise
4 Tbs chopped fresh coriander
1 tsp ground coriander
Method:
Drain the mackerel to remove any excess liquid and flake into a bowl.
Add the mash and the spices and mix gently to combine.
Form the mixture into fish cakes.
Heat a pan and add some olive oil.
Shallow fry the fishcakes on both sides until golden brown and warmed through.
Make the coriander mayo by combining the ingredients and seasoning.
Place the fishcakes onto a serving platter then top with a dollop of the coriander mayo.Serves 3-4 See more Canned Mackerel Recipes Add to my recipe book
